Spicy Peach Bisque

4 tablespoons unsalted butter

1/2 large onion, cut into large wedges

1 large peach, peeled and cut into large chunks or 1 cup frozen peaches

1 bottle Spicy Peach AubSauce

1 cup vegetable stock, or chicken stock

1 cup Heavy Cream

1/2 teaspoon salt, or more to taste

1/2 teaspoon Cayenne Pepper

 

DIRECTIONS

Melt butter over medium heat in a large saucepan. Then add onion wedges and peaches. Stir occasionally until onions are translucent and peaches soft.

 Add Spicy Peach AubSauce, stock, cayenne pepper, and salt. Bring to a simmer. Cook, uncovered, for about 20 minutes. Stir occasionally and add additional salt as needed.

 Pour hot mixture into a blender and puree until smooth. Allow heat to escape by removing the center lid from your blender (if possible) and covering with a towel. Alternative is to allow soup to cool slightly prior to blending or use immersion blender.

Pour the mixture back into the saucepan, cook over low heat and whisk heavy cream into the soup. Stir and let cook for 10 minutes.

 Serve hot or room temperature. Garnish with a gallop of sour cream and your favorite croutons.
